A peaceful resolution between Israel and Palestinians is a great threat to hardliners in Iran's government since the destruction of Israel as a country is one of their primary goals...along with turning the whole Middle East into a theocracy which is modeled after Iran's theocracy.
In short, they don't want to see peace made between Israel and any other country/people in the Middle East because, in doing so, it makes it harder for them to achieve their goals.
(There does exist some rational people in Iran's government, believe it or not, but they are highly marginalized since they are a minority.)
