Why 212 degrees for boiling, incidentally? Anyone know? It seems a very strange "unround" number!
I'm not 100% positive, but I'm sure the espresso coming out of an espresso machine is over 150 degrees. I know for a FACT that milk more a drink is often steamed into the 140 - 160 degree range.
