TAHITI CHICKEN
3 lbs. boneless, skinless chicken breasts; cut into halves
2 each red and green peppers; cut into large chunks
1 recipe white rice, cooked
1 cup shredded coconut
1 ounce rum
1. Saute' the chicken pieces and pepper chunks halfway, and simmer in the rum to cook to about three- quarters done.
2. Place chicken, peppers, and pineapple into baking dish over cooked white rice.
3. Top with South Seas Sauce.
4. Sprinkle shredded coconut on top; and bake at 375 degrees for 20 minutes.

SOUTH SEAS SAUCE
3 cans pineapple chunks in juice
1/4 cup soy sauce

1. Mix together first two ingredients in medium saucepan.
2. Heat under low flame and thicken with cornstarch.
Sorry; I had to come back to edit this recipe. I originally left out the rum because I didn't use it when I made dinner last night due to the kids being here for dinner!
