But, all jokes aside
Tonight, I am preparing a delicious whole chicken, made with my own homemade rub, consisting of select seasonings and herbs, rubbed, by hand, all over the chicken. It shall then be stuffed and baked. I shall also make a potato salad and some steamed rice on the side.
For desert, I made a homemade cheesecake, a very simple recipe.
The recipe I use for my cheesecake is:
4 eggs
1 can evaporated milk
1 can sweetened condensed milk
1 package of cream cheese
Vanilla extract to taste
I mix all that together, and pour it into the cake pan, then place the cake pan into a larger container with water, and bake at 350 for an hour, at most; although at times I give it another 10 minutes just to be sure.
When complete, I let it sit out on the counter for 1 hour, then I let it cool in the fridge over night. As you can imagine, I made this last night and it shall be ready to eat by dinner time today.
Usually before I serve the cheesecake, I make some homemade whipped cream with heavy whipping cream and a small amount of confectioners sugar, I think it integrates into the whipping cream a bit faster and more smoothly than regular granulated sugar. When serving, I place a nice dollop of whipped cream atop the cheesecake.

| Well; now I'm getting ready for the 4th of July celebration. Family reunion this year in Chicago; so I have a lot of work to do. I have already recruited many nieces and nephews to assist because I have to make over 75 of my Yankee Doodle Parfaits for the dessert that night. The barbeque itself won't be that hard- just your basic ribs, chicken, and usual staples; plus I'm making my Cajun Fried Corn to go along as a side dish.
I'm sure I'll have to do some extra exercising afterwards. I already feel heavier just thinking about all that food! |

Raspberry Lemonade
Hubby also went and picked up some meat/cheese/veggie trays, chips, potatoe salad, slaw, and dips since I'm nursing either a summer cold or summer flu. Although that store bought stuff really looks unappealing, if you ask me.
