| Today, for lunch, I fixed: Grilled Chicken Quesadillia's. Grilled chicken Fresh tomatoes Green Onions and Cilantro Salsa Chipoltle Sour Cream Fresh spinach Mexican Blended cheese. | How about a quick and easy soup to go with your sandwhich? Quick Oyster Soup 1 stick of margerine Half an onion finely diced 2 8 oz. cans of whole oysters 3 cups of milk 1/2 cup heavy whipping cream (optional) Tablespoon sugar Salt and Pepper to taste Crushed saltine crackers Melt butter in medium pot. Add onions and cook till transparent. Add canned oysters (including juice) and bring to a gentle boil till cooked. Add milk and cream, bring to boil, salt and pepper to taste. Serve with crushed up saltine crackers on top. Takes all of about 15 minutes from start to finish. The cream makes it a bit richer, thicker, and tastier in my opinion.
