As for the moussaka dish, that's extraordinary as I have never heard of it. Many years ago my godmom in Alabama got me to try eggplant. It wasn't bad. But I have to lay off the potatoes for my health's sake.

Like last night: I had a cod fish sandwich with those Sun-Chips from Frito Lay. The sandwich I got from Carl's Jr., a Southern California regional fast food place. It might be Hardee's in other cities.

I have to lay off potato chips. I have blood screening this week when I go to the blood bank for another platelet donation, and my cholesterol will be tested there. I'll see what happens. I am more into rice and whole wheat pasta.

I make chicken and rice tonight.

Actually Highway...I'm not a big fan of chicken noodle soup. Or any type of broth soup. Family loves them, but I'm more of a cream based soup lover.

Good luck on the cholesterol test too...Still drinking those Promise shots?

Although we're having leftovers tonight, I'm actually cooking already for tomorrow's supper...Making my famous slow cooked pasta sauce for the lasagna I'm doing tomorrow.

Started it early this morning. It'll cook till tomorrow afternoon when I put the lasagna together.

That's great Highway...I'd suggest you do a double dose before coming over for supper tonight though. You'll need it since this is the menu for tonight.
