CAJUN CRABCAKES

to 3 lbs. crabmeat
4 eggs,beaten

1 bunch cilantro leaves; chopped
1 fresh jalapeno pepper and1 habanero pepper;stems and seeds removed and peppers diced
1 tomato diced
1 bag of Panko bread crumbs (12 oz; save 3 ounces to coat cakes
1 tsp. tabasco
1 onion, diced

1. In medium bowl, mix eggs, mayonaisse, Old Bay seasoning,wocestshire, and tabasco sauces. Set aside.
2. In large bowl mix crabmeat and Panko bread crumbs.
3. Add the mayo & egg mix to the crab &bread mix. Set in refrigerator.
4. In small mixing bowl, add the diced peppers,tomato, onion, cilantro, and mix gently.
5. Add this pepper mix to bowl with all other ingredients, and mix well.
6. Refrigerate for 3 hours to allow breadcrumbs to absorb all liquids.
7. Form mix into medium patties (cakes).
8.Pan-fry or deep fry the crabcakes until they are golden brown.
9. Set cookedcakes onto papertowels to absorb any excess grease.
10. Serve with tartar or cocktail sauce!
2 thumbs up on the crab cakes!!! Not sure what a Panko bread crumb is I just made my own. They didn't need any cocktail sauce either! Yum

OTF; Panko bread crumbs can be purchased in any Asian food store. Simply put, they are great to bread fried food products with. They provide a crispy coating to things such as shrimp, chicken, and fish.
All it actually is; is dried white bread without the crust. Try Panko breadcrumbs just once-the next time you bread something to be fried- and you will be hooked forever; as I am. Good luck, friend.

I will be on the look out for them.....I can't imagine them crab cakes being any better though! I guess I will just have to force myself to make another batch. I might even share them this time

I spent most of Father's Day creating a new recipe: Cheesy Crabmeat Tatertots. I will post this recipe later today after I tweak it just a bit more. I came up with this for our local crab lover OTF. It will also work well with your dinner parties, Ali. Just save some for H80 and myself!

well seeing that I am here....Tonight will most likely be fast food, soft ball playoffs start tonight and we are the early game.

Yesterday for my Father and Father Inlaw....

I made:

Sesame Ginger marinated Chicken Breast
Tossed green salad
Potatoe Salad
Yellow Rice
Hamburgers / Cheeseburgers / Dogs
Brownies for desert.

Beer of the Day Sam Adams Boston Lager.
