Sorry this is so late, Ali dear; but I laid down after dinner and fell into a deep sleep. I didn't forget about you. (Like I ever could!) Anyway, here is the recipe for Tahiti Chicken:

TAHITI CHICKEN
3 lbs. boneless, skinless chicken breasts; cut into halves
2 each red and green peppers; cut into large chunks
1 recipe white rice, cooked
1 cup shredded coconut
1 ounce rum
1. Saute' the chicken pieces and pepper chunks halfway, and simmer in the rum to cook to about three- quarters done.
2. Place chicken, peppers, and pineapple into baking dish over cooked white rice.
3. Top with South Seas Sauce.
4. Sprinkle shredded coconut on top; and bake at 375 degrees for 20 minutes.



SOUTH SEAS SAUCE
3 cans pineapple chunks in juice
1/4 cup soy sauce

1. Mix together first two ingredients in medium saucepan.
2. Heat under low flame and thicken with cornstarch.

Thanks Nutty! ((((((((HUGZ)))))))) Got it saved to my recipe file. I think I might try that for the 4th of July weekend. WITH the rum of course.

Use artificial rum flavoring. You can get by the vanilla at the supermarket.

Actually, if you use the rum, I personally just use the small bottles that you can purchase in a liquor store. These are the same size that airlines serve if you purchase a mixed drink on a flight.
You can also add the South Seas sauce straight into the pan with the chicken simmering in the rum with the peppers and pineapple and coat the chicken this way. Just remember to sprinkle the coconut on top before baking!

Well Nutty...I didn't want to wait till July 4th...And I'm kinda not measuring the rum...Did I mention I don't measure anything unless it's bread/cookie/cake related?

Oh, and I'm cooking on the grill to keep the house from heating up as well. That'll let the marinade and sauce cook in real good I think. LOL!

Tonight's supper is:

Nutty Joe's Tahiti Chicken on Jasmine Rice
Stir Fry Carrots, Sugar Peas, and Cauliflower
Citris Salad w/Oriental Dressing
Sesame Cookies w/Coffee Icecream
Iced Strawberry Tea

Well, Sugar; if I hadn't just had Tahiti Chicken the other day ; I'd be on my way to your house for dinner! Tonight, I've been invited to a friend's house for homemade Mexican food and margaritas. I hope to pick up some recipes tonight; our hostess makes the best enchiladas I've ever tasted.
