Yep, sure did. Smothered it in pineapple in fact. But I did also use a bit more then 3 pounds of chicken. More like 5, so I could freeze some of it, as well as hubby would have some for work tomorrow.

I wanted to use a couple of fresh pineapples (which would have been more then 3 large cans worth of pineapple), but the prices of them have doubled in our area...And the darn things are half the size of what they were when selling for less?

15 ounces for 4 or less people; and the 28 ounce for a larger group.

Simply put, it takes two days to make because it is strawberry or cherry jello on one side of the parfait glass; and blueberry jello on the other. You have to lean the glasses slightly to the side as you cool the jello overnight; and you do one flavor at a time. Vanilla ice cream or whipped cream goes in the middle. You can insert and light sparklers for a real July 4th treat!

Anytime, Sugar! I'm still stuffed from the enchiladas I had last night. I will try to get the recipe sometime later today or next week. Ny friend and his family will be out of town for the holidays.

Then I would use the smaller can, Joe. After all, it is only my younger sister and I that live together. My older sister does not like rice, period.

So I would need to cut the recipe down to 1# of the chicken breasts, one pepper each, the rice (2 cups cooked rice), probably 1/3 cup shredded coconut, probably 1/3 oz. of rum/rum extract, the pineapple, and I guess like 1 oz. (1/8 cup) of soy sauce.

The way I have made chicken and rice in the past, using 1 can each of Cream of Mushroom and Cream of Chicken soups, and 1 can of milk, I figured that the shortened version of your recipe might be enough for less than four people.

Do you agree? Thanks again for the recipe. I am anxious to try it. It looks wonderful. And I know the sweet and most precious Ali can do magic with any recipe, even pork chops (of which I have some boneless ones in the freezer).

Nope, sure haven't. I'll do them at a later date because for tomorrow's festivities, we're doing strawberry-blue berry shortcake for dessert.
