We had a light dinner this evening.

Garden Pasta
Light Raspberry vinaigrette dressing
Mixed in(from the garden)
Fresh Tomato
Fresh Cucumber
Red Bell Pepper
Fresh Basil
Fresh Parsley
Onions
Fresh Grated Parmesan cheese

Kind of made up my own pasta salad. It was fresh and cool on a hot summer day.

Just a light supper for me and Dad tonight; steamed broccoli, carrots, and cauliflower for me; and he just wanted a quickie frozen dinner to heat up. I wasn't in a creative cooking mood tonight, and he didn't want to go out to eat. I'm planning to make him Scallops DeJohnge tomorrow night. He is a real scallops freak; but any seafood makes him happy.

Don't feel too bad, my friend; this diet of mine is more a mental torture than one could ever believe. I'm starting to feel creative and want to try some new dishes but can't until I drop the excess baggage. I've been doing good this past week; so it won't be as long as I thought; and then I'll be able to return to one great love of mine: creating new dishes! Keep your chin up, H80! I failed to mention that my meal, which I brought from home, was at the ballpark. What we are served in the employee break room is none too good, either.

There is a set plan for each day:

Monday (I forget)
Tuesday: Italian sausage with peppers, baked ziti
Wednesday: Chicken breasts
Thursday (I forget)
Friday: Baked Tilapia (the best of the whole week)
Saturday: Deli sandwiches
Sunday: Hot dogs and hamburgers.

On more than one day, salad will be offered. Some days there are pasta salad. One day there is red potato salad. Every day a cookie is offered.

One day earlier this season, beef broccoli was offered with rice, and that good enough for me.

So most days I bring my own food, but I do buy and dish up a salad for two bucks.

Well, I have dropped 12 pounds; so I allowed myself a treat. August 1st was my sister-in-law's birthday; so I was able to make my AZTEC CHICKEN for her and the family. I'm going to sound like a pompous ass here, but damn, it was good!
