The shark is fresh, but not that fresh Highway.

Hubby's really looking forward to it. He wasn't much of a fish eater when we met. Now he loves any type of fish, as long as it's me cooking it. And shark is one of his favs (mine too). I had fun watching him pick out the biggest cut yesterday at the store for himself. ROTFLMAOL!

The locals sell shark pinchos here near the beach, that's fish on a stick or shis ka bob... not bad for a couple bucks.

Yes it is. And considering shark is denser then other fish to begin with? That's ALOT of fish he's got there. Heck...Mom and I will be eating on ours a couple of days as is. But he'll finish all his in one sitting. Plus do doubles on dessert.

I have no clue where he puts it all or how he stays so darn skinny myself, considering he has the appetite of a lumberjack.

Well, since I missed dinner at Ali's; I'll just eat extra fruit at breakfast. By the way, Ali; one of my nieghbor's was throwing a small dinner party last night; and she also wanted to serve Spinach Salad with Bacon Vinegarette, but she had no such recipe for the dressing. I was feeling especially generous yesterday; so I made a batch for her to use. I'll post my recipe for the Bacon Vinegarette dressing later today so you can compare it with yours.

Mine isn't anything fancy. It's an old family recipe.

Brown 3-4 strips of bacon in a smal sauce pan, remove and crumble leaving bacon grease remaining. Then add half a small finely minced onion to bacon grease, cook till transparent. Add salt, pepper, sugar, and vinegar. Heat throughly, add crumbled bacon, then pour over fresh spinach or loose leaf lettuce. Toss till coated.

For a creamier type of dressing, I'll sometimes let it cool down then add a 1/4 cup each of mayonaise and 2% milk. Which my mother says wish she'd thought of herself when she taught me to make the basic bacon vinegrette. ROTFLMAOL!

My recipe is not all that far off from yours; Sugar. Here it is;

Bacon Vinegarette Dressing

1 lb. bacon; crosscut into 1/8" strips
2 cups red wine vinegar
1 cup water
1 cup brown sugar
1 pinch thyme
cornstarch to thicken

1. Brown bacon in large skillet. DO NOT DISCARD BACON FAT!!
2. Add sugar, vinegar, thyme; and water. Simmer under medium heat for 10 minutes.
3. Thicken to desired consistency with cornstarch.

Note: Two tablespoons of hot sauce can be added to this recipe for a spicy dressing; if desired.
