Brown 3-4 strips of bacon in a smal sauce pan, remove and crumble leaving bacon grease remaining. Then add half a small finely minced onion to bacon grease, cook till transparent. Add salt, pepper, sugar, and vinegar. Heat throughly, add crumbled bacon, then pour over fresh spinach or loose leaf lettuce. Toss till coated. For a creamier type of dressing, I'll sometimes let it cool down then add a 1/4 cup each of mayonaise and 2% milk. Bacon Vinegarette Dressing 1 lb. bacon; crosscut into 1/8" strips 2 cups red wine vinegar 1 cup water 1 cup brown sugar 1 pinch thyme cornstarch to thicken 1. Brown bacon in large skillet. DO NOT DISCARD BACON FAT!! 2. Add sugar, vinegar, thyme; and water. Simmer under medium heat for 10 minutes. 3. Thicken to desired consistency with cornstarch.
