Attention, Ali and Nuttyjoe: here's a new recipe for you to try.

ROSEMARY CAPER CHICKEN

Ingredients

1/4 cup olive oil
2 boneless, skinless chicken breasts
Lemon pepper seasoning
3 fresh springs rosemary
1 1/2 tbsp. capers

RECIPE:

1. Pour olive oil into a small casserole dish. Place chicken in dish and turn so that both sides are coated with oil.

2. Sprinkle seasoning on both sides as well. Add sprigs of rosemary on either side of the chicken and one in the middle. Cover and bake at 400 degrees for 15 minutes,

3. Add capers and bake uncovered for 15 minutes or until done.

Enjoy.

Could that work without the capers and just be Rosemary chicken?

I'm sure you can omit capers, Bronwyn. I didn't get online until late last night when I worked a full day at the ballpark yesterday.

Well...since I was runnign late this morning and hadn't taken anything out for supper...the kid and I winged it and made Homemade Hamberger Helper: Hamberger, a can of Bush's Grilling Beans, tomato paste and shredded cheese.

I love one-pan meals come wash-up time!

You too...I'll save you a piece of pizza, since it seems we're both in an 'Italian' mood...

I'm just fixing salad and a home-made Chicken/Bacon/Sundried Tomato Pizza...Even cooking the pizza on the grill cause the humidity today is horrible and don't want to heat the house up with the oven. ROTFLMAOL!

Well, with Autumn making her appearance...I decided to do a bit of cooking today. Tonight's supper is:

Crab-Scallop-Sun Dried Tomato Linguine (hubby's sauce is just the sundried tomatoes)
